Ingredients
- 1 Great Balls of Flour pizza dough ball
- Great Balls of Flour Garlic Butter (1-2 tbs per ball)
- Great Balls of Flour Garlic Dipping Sauce (1-2 tbs per ball)
Method
Ensure you have prepared your Great Balls of Flour pizza dough ball so it is rested and has got up to temperature. This will make it really easy to press and stretch your dough ball into the pizza base.
Fire up your pizza oven and leave it to heat up in accordance with the manufacturer’s instructions or, if using your kitchen oven, set it to its maximum setting (250ºC) waiting until your stone or steel has had sufficient time to get to temperature (around 15 minutes).
Sprinkle your work surface with flour and semolina mix and roll your dough ball lightly covering it all over to ensure it doesn’t stick to the surface. Spread and stretch like in this video
Sprinkle your pizza peel or parchment paper with flour and semolina mix. Transfer to your pizza peel, or parchment paper if cooking in a home oven. Remember to shuffle the pizza base a couple of times throughout the building process to ensure your base doesn’t stick to the peel/parchment paper.
Cooking guide
Divide the dough ball into 10 equal pieces of 25g each and roll them into a ball. Let rest for 30 minutes, covering in a clean tea towel. Transfer carefully to your oven. If you have an oven safe baking tin that is suitable for this size, place each ball inside this at this time as this will make them easier to handle in the oven.
Cook in a home oven for 6 – 8 minutes until golden brown. Cook in pizza ovens until golden brown, usually around 2- 2/12 minutes so as to allow the centre to be fully cooked. You will need. consider the flame of your oven during this bake and move the balls around accordingly.
Transfer from the oven and leave to cool. Prepare your garlic butter by scooping about 1 – 2tbs of garlic butter, or garlic dipping sauce into a small dish or ramekin, add in some chopped rosemary or chopped herbs, and mix. Serve. Watch out for sneaky small hands when letting them cool… they have a tendency to pinch the balls!
