Nduja alla cipolla is a traditional Calabrian dish that combines two important ingredients from this southern Italian region: nduja and cipolla (onion).
Nduja is a spreadable, spicy pork sausage that is made with pork meat, lard, and Calabrian chili peppers. It has a soft and creamy texture and a fiery taste. It is typically used as a condiment to add flavour and heat to pasta dishes, pizzas, and bruschetta or thick slices of bread.

In ‘Nduja alla cipolla, the nduja is typically sautéed with sliced onions until the onions are caramelised and soft, and the flavoyrs of the two ingredients are melded together.
