Nduja di Spilinga is a type of spreadable salami sausage paste that originated in the Calabria region of southern Italy. It is made from a blend of ground pork meat, fat, and mixed with either Calabrian chili peppers or red onion as well as a variety of spices such as fennel and black pepper.

The mixture is then stuffed into a casing and aged for several weeks to develop a delicious umami flavour.

The result is a soft, paste like salami that is perfect for placing on pizza, breads, crackers, or other snacks.

Ndujua di Spilinga Calabrese has a bright red color and a rich, complex flavour that combines the smokiness of the meat with the heat of the chilli peppers.

Nduja di Spilinga Spammable alla Cipolla, brings out the deep purple colour of the red onions and is more similar in texture to a coarse pate, albeit slightly softer.

Nduja di Spilinga are very versatile ingredients that can be used in a variety of dishes. Both flavours of sausage can be added to pasta sauces, pizzas, or used as a topping for bruschetta. It can also be melted into soups or stews to add depth and complexity to the dish.
