To ensure our dough balls are great every single time, we follow the same secret blend of flours and malts, add water, yeast or our sourdough starter, and a pinch of salt. Then we give it time. 48 hours in fact. This develops our unique flavour, breaks down enzymes making it easier to digest and produces a strong, crisp base along with a light and airy crust.
